Enchiladas

~40mins, 200c / 180c fan

Ingredients

oil
500g mince (turkey or beef)
meduim onion - finely chopped
pepper - deseeded and thinly sliced
400g can chopped tomatoes
400g can kidney beans in chilli sauce
1 tbsp fresh lime or lemon juice
3 tsp coriander
6 tortillas
50g cheese

Method

Fry the mince, onion and pepper for 5mins, breaking up the mince and stirring regularly.

Add the chopped tomatoes and beans

Simmer and cook for 10mins, stirring regularly, preheat oven 200c / 180c fan

Bring the mince mixture off the heat, adding the lime/lemon, coriander and season well

Lightly grease an oven dish, Add each tortilla filled with spoonfuls of the mince mixture, rolling up and tucking into the oven dish.

Add any remaining mince mixture down the sides

Sprinkle the cheese on top

Bake for 15mins
